The fruit is harvested cool in the early am and tipped directly into the press to quickly extract the juice with minimal skin contact and oxidative handling of the juice further helps remove any unwanted tannins and colour. The juice is clarified and fermented in a stainless steel tank for approximately 14 days at temperatures between 13° & 15° Celsius. The wine is stabilised and fined prior to bottling in July 2019 to lock in the crisp, fresh and unique Grigio aromatics.
Clarification - Sterile filtration
