After a winter of moderate rainfall, Heathcote’s growing season was
mostly warm and dry with a few extreme heat days.
The grapes produced were vibrant with grand colour and flavour - lip smackingly

We let the wild yeast in the winery take hold of the clean crushed fruit
to kick off the ferment. With Shiraz we prefer a longer slower ferment,
allowing more even flavours and colour extraction without over-doing
it. Once pressed we run the wine to mainly French oak and a little bit of
American hogsheads, where it spends the next 12 months, and allows
the Heathcote fruit to do its stuff. Our aim is to produce a Shiraz that
has a balance of power and concentration with elegance and grace.
No winemaking artifice, just pure expression of Heathcote Shiraz.
